Talking Parsnip & Apple Soup Recipie

I tried this recipie fpr Parsnip & Apple soup yesterday and it is so EASY, Quick and sooooooooooo yummy!

Suitable for all stages of WLS!

800g peeled chopped Parsnips.
2 lrg Bramley Apples - peeled. cored & chopped.
Knob Butter (or olive oil)
1½ Litre Veg Stock.
Salt & Pepper to taste.

METHOD:

Fry Parsnips for 5 mins in butter (or oil).
Add Apples & Stock.
Bring to boil & simmer for 15 mins.
Add Seasoning to taste.
Cool slightly & blitz with blender.

Serve and enjoy!

(Add glug of cream if not watching calories!)

This was so easy and quick yet full of flavour!
It was so satisfying - My Pouchy LOVED it!
