summer meals ?

Anyone got any nice summer meal ideas that's low fat low sugar high protein my dinner today is tuna with feta and olive salad looks bigger that it is , it's a toddlers plate and won't be able to finish it all but will have a good go

Looks delish. . Had quite a few tuna salads on my pre-op. Is that tuna a flavoured one. I am finding some brands a bit tasteless when they are in brine or spring water?

Restriction wasn't as bad i managed it all nearly only left one tomato half a baby potato and two olives so done well hahaa xxx it was lovely

Love my tuna salads it's more or less my staple lunch time diet now , either tuna egg salmon or chicken , gonna make some Lemmon pepper salmon kebabs this week on my Forman grill with some nice red onion and cherry tomatoes , and some breakfast mini muffins they look nice too x

Hi sorry just realise you asked if it was flavoured tuna, yes its tomatoes and basil, by Aldi tiny tins they have quite a few kinds , but my favour is John west tiny tin of tuna in garlic and chilli it's lovely with feta and thin crisp bread x

I have been making a lot of foil meals lately with chicken , zucchini , onions , bell peppers and egg plant with a little olive oil . Wrap it in foil and bake at 375 degrees for 20- 25 mins.

Sounds so nice that I'll have to try it , I love my paprika chicken in foil and I also love Cajun chicken baked in foil

Griddled asparagus wrapped in Italian ham with poached egg, so gorgeous...tuna nicoise - tuna, olives and hard boiled egg with green beans).....Just discovered that cold cooked broccoli is delish with sesame seeds and soy sauce, have it with salmon....I make my version of sushi with fish, pickled ginger and wasabi wrapped in long thin slices of courgette.....also found a spiraliser that makes "spaghetti"out of veg, top it off with a ragu made with quorn or Turkey mince....

Kirsty has just posted in her diary that Tesco are stocking corvette pasta and cauliflower rice ready prepared, sounds be ill, if I wasn't in my pjs I would go get some..

Can't beat a lovely smoked salmon and cream cheese protein summer snack. So much more choice with fish in the summer.
