Following the thread on these as good snacks, this month's Olive mag has a nice recipe featuring Sainsburys edamame & butter bean salad. For those who can tolerate bread, toast some lightly, add this ready made salad & torn up goats cheese onto toast. Return to grill for a few mins. Sprinkle with the pre made salad dressing (chilli & coriander). Use reduced fat goats cheese & omit dressing to reduce fat content. I used Melba toast as can't tolerate bread.
