Cauliflower and blue cheese soup

Slim for 2009
1 large onion chopped
270g cauliflower broken into florets
2 stock cubes in 900ml boiling water
120g low fat/very low fat soft cheese
60g blue cheese - any type (I use half this and it still tastes good)

Cook onions in spray light till soft.
Add colly and veg stock bring to boil, cover and cook for 15 mins till tender.
Transfer to food processor and blend. Add soft cheese and blue cheese and blend again.
Reheat gently to prevent curdling.
