Moroccan Bean Salad

1 can chick peas
1 can kidney beans
1 can black eyed peas
1 can cannelini beans
1 can sweet corn
2 small onions finely diced
1/2 sweet red pepper finely diced
1/2 green pepper finely diced
1 clove garlic finely minced
2 tsp smoked paprika
2 tsp ground cumin
2 tsp ground coriander
2 tsp fresh chopped thyme
2-3 tbsp extra virgin olive oil
2-3 tbsp white wine vinegar to coat
sea salt to taste
fresh ground pepper to taste

Combine all ingredients in a large container with a lid. Close lid firmly once you have added everything, give it a good shake and put it in the fridge. Chill for at least one hour but it is better overnight.

Serve with homemade flat bread or as a side dish to grilled meat or fish. I have also added tinned tuna to it and it was yum. Loaded with vitamins, protein & fibre plus it tastes amazing, it is also pretty with all the colors.
