Quickie Microwave Recipes ...

Bacon-Cheddar Frittata

6 eggs, beaten
8 slices bacon - crisply cooked and crumbled
225g grated cheese chopped fresh parsley
salt & pepper


chopped fresh chives
  • Grease a deep plate
  • Mix all ingredients except chives; pour into plate
  • Elevate pie plate on inverted dinner plate in microwave oven
  • Microwave uncovered on medium (50%) for 12-14 minutes until set, turning twice during cooking
  • Sprinkle with chives & serve

Stuffed Mushrooms
8 medium sized mushrooms (approx. 6cm diameter)
2 rashers bacon
2 shallots or 3 spring onions
3 tablespoons fresh breadcrumbs
dried parsley flakes
salt & pepper

knob of butter
grated cheese

  • Wipe mushrooms, remove stems
  • Trim stems and chop finely
  • Chop bacon and shallots/spring onions
  • Place into a small bowl and microwave on full for 1 minute
  • Add breadcrumbs, seasoning and mushroom stems and mix well
  • Place a heaped teaspoon of this mixture into each mushroom
  • Sprinkle with grated cheese
  • Place mushrooms onto a plate and dot butter between mushrooms, cover with clingfilm
  • Microwave on high for 2 minutes

Meatball Morsels

1 lb minced beef
1 egg
110g soft bread crumbs
2 squeezes ketchup

1 tablespoon parsley flakes
1 teaspoon onion powder
salt & pepper

  • Thoroughly combine all ingredients
  • Shape into 1" balls
  • Arrange half of the meatballs on dish
  • Microwave on full for 4-6 minutes; stir once
  • Rotate dish after 3 minutes
  • Drain liquid
  • Repeat with remaining meatballs
  • Serve with favorite sauce or gravy
 
what is the calory intake per potion of these recipies ?

And no, I don't think they are for one person!!! Adjust accordingly - or share with family! :)
 
I'd never be able to eat them! I can only do a scrambled egg for breakfast or lunch!! I think they would be too much for me!

Oh my lord I really have no life to have sat and worked all that out. these are for the total, not portioned.

Fat - 89g
Carbs - 91g
Protein - 103g

Obviously any sauce added would be extra.
 
sounds nice but a little too high in fat content for me.:sigh:

And pleased you like them Sarah :)... I was a bit disheartened then :giveup:as they look great recipes to me (& not all too high in fat if taken proprtionately!) :confused:
 
Scalloped Potatoes

3 eggs
1/2 pint milk
4 medium-large potatoes
small onion
salt & pepper


slice ham & grated cheese optional
  • Place milk, eggs & potatoes in a blender & chop until the potatoes are pea size chunks
  • Pour into a casserole dish
  • Microwave for 15-18 minutes
  • optional You can lay a slice of ham over the top during the last 5 minutes. Top with cheese
Potato And Egg Scramble

1 large potato, peeled and diced
Small chopped onion
Small chopped green or red pepper
4 eggs
1/4 pint milk
salt & pepper

sprinkle of garlic powder
  • Combine potato, onion and green pepper in a deep plate (an inch +)
  • Cover with film and microwave on high for 4-5 minutes, or until potato is tender
  • Combine eggs, milk, salt, pepper and garlic powder in a medium bowl & beat slightly
  • Pour over potatoes in plate
  • Cover with film and microwave on high for 4 minutes, stirring half-way
  • Leave to stand, covered, for 1 minute
  • Serve immediately
