Bacon-Cheddar Frittata
6 eggs, beaten
8 slices bacon - crisply cooked and crumbled
225g grated cheese chopped fresh parsley
salt & pepper
chopped fresh chives
Stuffed Mushrooms
8 medium sized mushrooms (approx. 6cm diameter)
2 rashers bacon
2 shallots or 3 spring onions
3 tablespoons fresh breadcrumbs
dried parsley flakes
salt & pepper
knob of butter
grated cheese
Meatball Morsels
1 lb minced beef
1 egg
110g soft bread crumbs
2 squeezes ketchup
1 tablespoon parsley flakes
1 teaspoon onion powder
salt & pepper

8 slices bacon - crisply cooked and crumbled
225g grated cheese chopped fresh parsley
salt & pepper
chopped fresh chives
- Grease a deep plate
- Mix all ingredients except chives; pour into plate
- Elevate pie plate on inverted dinner plate in microwave oven
- Microwave uncovered on medium (50%) for 12-14 minutes until set, turning twice during cooking
- Sprinkle with chives & serve
Stuffed Mushrooms
8 medium sized mushrooms (approx. 6cm diameter)
2 rashers bacon
2 shallots or 3 spring onions
3 tablespoons fresh breadcrumbs
dried parsley flakes
salt & pepper
knob of butter
grated cheese
- Wipe mushrooms, remove stems
- Trim stems and chop finely
- Chop bacon and shallots/spring onions
- Place into a small bowl and microwave on full for 1 minute
- Add breadcrumbs, seasoning and mushroom stems and mix well
- Place a heaped teaspoon of this mixture into each mushroom
- Sprinkle with grated cheese
- Place mushrooms onto a plate and dot butter between mushrooms, cover with clingfilm
- Microwave on high for 2 minutes
Meatball Morsels
1 lb minced beef
1 egg
110g soft bread crumbs
2 squeezes ketchup
1 tablespoon parsley flakes
1 teaspoon onion powder
salt & pepper
- Thoroughly combine all ingredients
- Shape into 1" balls
- Arrange half of the meatballs on dish
- Microwave on full for 4-6 minutes; stir once
- Rotate dish after 3 minutes
- Drain liquid
- Repeat with remaining meatballs
- Serve with favorite sauce or gravy
