My surgeon told me that nobody sews the actual bit to make the stomach smaller. Everyone uses staples. The bit they're referring to when they say they sew rather than staple, is the bit of the intestine that they reconnect to the new pouch.
He said, you can't sew instead of use staples, because there is too high a risk of the sutures coming undone and causing lots of problems, so nobody does it.
