Balsamic Vinaigrette

Simple Salad Dressing

2 tablespoons Balsamic Vinegar

1 tablespoon Walnut Oil (Almond Oil is also good)

1 tablespoon White Vinegar

1.5 tsps Mixed herbs or 1/2 tsp Basil, 1/2 tsp Oregano, 1/2 tsp Parsley

1/2 tsp Cayenne pepper

5 grams Parmesan Cheese, dry grated

2 tablespoons water

1 tsp Splenda (or any other low-cal sweetner)

1 tsp Sea salt

1 tsp Black pepper

Mix all dry ingredients together then add wet. Put in an airtight container that is good for pouring. Chill for at least an hour before serving & always shake before use.

Good for about a week.

Recipe yields about 6 to 8 - 1 tbsp servings.

Calories per serving - 31.5, protein: .4g, fat: 2.6g (these are mostly good fats from nuts), carbs: 1.4g

I wonder whether peanut or sesame oil would work in place of walnut/almond oil? They have similar fat properties. I've already got those two in my store cupboard, along with the rest of the ingredients :)

Same here Twiggie, we'll have to check the cals and give it a go

I've just been doing my online shopping so checked out the oils. Walnut oil has almost half the saturated fat at 8% so is obviously a healthier option, and no doubt why Nic chose it.

The others are all about the same as olive oil, ranging from 11-15% saturated fat. They all seem to be around the same calories though @ 820kcals, apart from some of the infused oils which are 900kcals.

I guess it all comes down to preference of flavour and what's available.
