I used Icelands frozen diced chicken and frozen chicken tikka pieces.
Ingredients
2 Onions
diced chicken pieces
mushrooms quartered
madras curry powder ( i use 2-3 tsp) but this depends on your tastes and the strength of the poweder)
1 garlic clove
1 tim of toms (or any soft ones that are in the bottom of your fridge)
1 Carton of passata (or if preferred use another tin of toms)
2 chicken stock cubes made up in 1/2 cup
of water
low fat natural yoghurt if you want a creamy curry

- Chop the onions and fry in a touch of oil or fry light until soft (or golden brown if preferred).
- Add the chicken pieces and stir fry
- add the garlic and curry powder and stir fry for a few minutes then add the toms and bring to the boil and then turn down and simmer gently for a couple of hours
- ( if you need some sweetness you can add a touch of tom ketchup but if you are sensitive to sugar you could add a teaspoon of sweetener).
