Low Fat Chicken Curry

I used Icelands frozen diced chicken and frozen chicken tikka pieces.

Ingredients

2 Onions
diced chicken pieces
mushrooms quartered
madras curry powder ( i use 2-3 tsp) but this depends on your tastes and the strength of the poweder)
1 garlic clove
1 tim of toms (or any soft ones that are in the bottom of your fridge)
1 Carton of passata (or if preferred use another tin of toms)
2 chicken stock cubes made up in 1/2 cup
of water
low fat natural yoghurt if you want a creamy curry

  • Chop the onions and fry in a touch of oil or fry light until soft (or golden brown if preferred).
  • Add the chicken pieces and stir fry
  • add the garlic and curry powder and stir fry for a few minutes then add the toms and bring to the boil and then turn down and simmer gently for a couple of hours
  • ( if you need some sweetness you can add a touch of tom ketchup but if you are sensitive to sugar you could add a teaspoon of sweetener).
If you want to add the yoghurt for a creamy curry - remove the pan from the heat and stir in a tbsp at a time until the desidered creamyness is reached.

Hiya - the curry sounds ace...I have some of the chicken in from iceland and I am struggling with what else to do with them! Nice one hun - thanks! x
