Shopping is sooooooooooooooooooooo hard!!!

I went shopping earlier and really found it hard to find things I could eat!!! I did settle on swedish meatballs and made an absolutely delicious broccoli and cauliflower cheese bake! After my initial despair at not being able to find things I actually turned my brain on and came up with some delicious ideas!!!

I'm generally finding things slightly easier than I had anticipated! I'm definitely rarely hungry and often have to make myself eat. I can't drink enough yet but finding it easier to get my protein in!! I know things will get easier!!!!

I almost gave up trying to find things in the supermarket. Most of the stuff i can tolerate texture wise seems full of fat and obviously its impossible to find sweet things that are made with sweetener rather than sugar.
I find it easier to make stuff from scratch myself, at least then i know whats in it and can make a healthier alternative, but some days when i'm feeling lazy (which erm...is quite often !) i wish i could just pop to the shop and pick something up without having to scrutinize the nutritional info.

I feel exactly the same! I did look at some ready meals etc but I don't really enjoy them anymore to be honest. I'd rather make myself a nice bolognese!!

My other meal choice for the week (to try!!) is chicken stuffed with pesto and mozarrella! It used to be one of my faves and I'm hoping I'll be able to have it again!! I have had chicken and was fine with it so will try it later in the week. I'm also trying to come up with some super-healthy options but finding this harder! Think my brain isn't quite there yet!!! Any ideas very greatfully received!!!

I've got a really nice Weight watchers cook book that might be suitable now. Have some sloppy-softish things in that are yummy. I'll dig it out and send you some titles of things. If you like the sound of them I'll send you the recipes x

I brought a fab book that I read about on this forum, I can't recall who mentioned it but it's great for recipes, it's American but easily followed it's called 'Before & After' by Susan Maria Leach, it has a great recipe for apple sauce.

I have also ordered some sugar free syrups, made using Splenda, they are called Da Vinci, I've got Gingerbread, Butterscoth, Caramel, Almond, Dulce leche and Maple.

Try looking in Rosemary Conellys low fat cook books for inspiration. Made some things over the years out of these books and they have loads of flavour and are easy to follow.
