Butternut Squash Soup

...not necessarily for Bariatrics, but its gorgeous, and thought Id share!

Ingredients
1 Butternut Squash (halved, de-seeded)
3 large carrots
2 onions
5 cloves of garlic
chicken (or vegetable for vegetarians) stock
mixed herbs
pinch cinnamon

I roast all of the veg (because Im lazy and can be doing other things whilst its cooking!) but you can put all the ingredients in a saucepan and do it that way.
Once the ingredients are roasted, (squash takes longer, if Im impatient, I finish it off in the microwave!) put all of the veg and stock in a bowl, then with a stick blender, blitz away. I do it until smooth, but if you like lumps, then remove some of the veg and add at the end.

Makes a fair amount, about 2 litres I think...
 
Yes I have a similar recipe mine just has red onions and peppers and butternut squash in and veggie stock cube tastes delish ideal vegetarian meal. I usually use a potato masher to reduce lumps, so still has few in but have liquidised it before used to freeze it as well really nice, I had it on my pre op diet, took some in hospital with me for my last meal. xx
