salmon cup cakes

Hi all i made these today and thought you all may like the recipe.:D

ingredients

One tin of salmon in brine
300g of cottage cheese with onion and chive
half a red pepper
half an onion
4-6 mushrooms
4 eggs
salt and pepper


Method

chop onion, pepper and mushrooms and place in a large mixing bowl.
Drain the salmon and add to the bowl
Blend eggs and cottage cheese pour over the mix and stir well.
Place into cup cake moulds and bake in the oven until firm and golden, about gas mark 4

Makes 12

They taste yummy

Do you reckon instead of adding the mushrooms you could stuff them with the mix?

I tried them with vanilla sugar free syrup and a fresh raspberry.

Omg so lush....

As above recipe but omit the fish and the veg and use pineapple cottage cheese xxx
