Special occasion cakes???

So currently I'am working doing cupcakes and special occasion cakes for all occasions in my local area and have been quite successful. After speaking to some regulars on here it got me wondering if anyone would be interested in specialist post WLS cakes? For occasions? Low sugar, low fat etc. Obviously any feed back, ideas or interest would be very welcome but due to obvious delivery would have to be the South east areas only currently xx

Your not in my area but I think this is fab. You have got me thinking now I should ask my cake lady to do the smallest cake of our wedding cake in October this way. I'm one month post op and I must say I was worrying my cake would make me ill if I had some! I'm paying 225 for it I deffo want some lol

I don't currently of the WLS ones but I shall be baking this week and taste testing.

I do have pictures of non WLS cupcakes and cakes tho? Xx

Oooooo I'm giving away trade secrets but I will share the love

So I'd use To make 6-8 sponge cupcake bases plain obviously. You can your own flavourings etc.

150g of almond flour or you can use believe it or not protein powder. Brill for added protein in take!

1 tsp of bi carb

5 tsp of Splenda

125ml of fat free yogurt or semi skimmed milk but I prefer the yogurt.

75ml of low fat butter/marg

1 tsp of vanilla extract.

Then for a low fat topping I use,

300g low fat cream cheese/Philadelphia

75g of low fat butter or marg

1tsp of vanilla extract

5 tsp of Splenda xx

As I say it's a recipe In the making and I'm trying to find tasty alternatives to the low fat situation.

The sugar is great and I never believed how many non carb alternatives to flour there are.

Hope this helps xxx
