Tomato & Bacon Soup

I love this soup and it can be eaten in all stages :D

3 peppers (i use yellow, red and orange) deseeded and chopped

1pack lean bacon, cut into strips

1 large onion chopped

1 tin chopped tomato's

1 cup of red lentils

1 vegetable stock cube

500ml water / seasoning to taste


Use couple of sprays of fry light and soften onion and peppers over medium heat.

Then add bacon and fry off til cooked.

Add tomatoes , veg stock cube and water and bring to the boil.

turn down heat and simmer and add lentils.

Cook until lentils are soft (approx 20/25 mins) then blend.

Be careful when adding seasoning - I dont add salt as it gets plenty from bacon -

Is really tasty and a great source of protein with bacon and lentils, my kids love this too!!:D

Try adding chilli flakes for added kick ;)

So nervous but excited at the same time , heard lots of good things about murryfield so I know I am in good hands , it just the walking to the theatre room and being put to sleep not looking forward too xx

i cried like a big baby :) but they honestly are so lovely held my hand and listened to me blabbing on about what if i die and tell my kids i love them etc etc xx

You can make it and freeze it hun - so no need for cooking in early days xx

No I havn't sorry x I try not to get hung up on Cals and concentrate on getting healthy and protien rich food in me x
We eat so little anyway and I dont eat anything not suppposed too :) as long as weight is coming off that will do me ;)

Mmmm.................I'm going to make some this coming week and freeze it as I have my op in 2 weeks. It'll be there for when I'm up to eating after the op.

Stupid question alert... Will this be ok as liquid, or is it still lumpy when blended? Just cause I'm only 8 days post op (wrap) and it sounds delish!!! But don't know if I should wait till next week when I'm on puréed food?
