I love this soup and it can be eaten in all stages 
3 peppers (i use yellow, red and orange) deseeded and chopped
1pack lean bacon, cut into strips
1 large onion chopped
1 tin chopped tomato's
1 cup of red lentils
1 vegetable stock cube
500ml water / seasoning to taste
Use couple of sprays of fry light and soften onion and peppers over medium heat.
Then add bacon and fry off til cooked.
Add tomatoes , veg stock cube and water and bring to the boil.
turn down heat and simmer and add lentils.
Cook until lentils are soft (approx 20/25 mins) then blend.
Be careful when adding seasoning - I dont add salt as it gets plenty from bacon -
Is really tasty and a great source of protein with bacon and lentils, my kids love this too!!
Try adding chilli flakes for added kick
