High Protein Chicken Salad

This is a dish that I have adapted from a high protein recipe book.

It is lovely and high in protein. There is approx 50 gr of protein per serving (depending on how many nuts you add)

serves 2
8 oz cooked chicken breast chopped into bite sized pieces,
1 sweet apple chopped
1 - 2 sticks of celery chopped
2 tablespoons (about 1 - 2 oz) of chopped dry roasted peanuts (I use salted as I love the taste)
small pot of plain yoghurt (I use Fage 0% fat 170g pot as it is high in protein)
1 tablespoon of mayo mixed with 1/2 teaspoon of curry powder
pinch of cayenne

toss together the chicken, apple, celery and peanuts in a large bowl. In a small bowl mix yoghurt, mayo, curry powder and cayenne. Toss this into the chicken mixture, serve on lettuce leaves.

The actual recipe states 1/4 cup plain yoghurt, but I use a bit more yoghurt than recommended as I like a 'wetter' mix, but you can adjust to suit your own taste.

sounds delish.. yum!

Thanks Jane!
Your recipe sounds delicious and healthy.
I've bookmarked this thread 'cause I'm on pre op milk diet and cannot try it out immediately but want to try it asap ... well ... as soon as I can eat solids after my May 6th bypass.

Thank you xx
