You also lose muscle,hence eat protien and exercise.After the initial water loss the fat starts shifting.I would say the preop diet would clear most excess water.
I agree with Big and bouncy, I would say most of the water weight is gone if you stick to the pre-op diet, so any weight after that is going to be mostly fat with some muscle and water included.
A high protein, balanced diet is vital to ensure that the muscle wastage is not severe.
