Phat Photo Food Journal with Recipes

Dinner Day 1:

Quiche (with prawns & roast veg)

6 Large Eggs beaten
2 tablespoons Milk
250g Cottage Cheese
Spelt flour 1 tbsp
Any cooked veg - Roast Veg, diced (swede, carrot, onion, courgette - I used left overs from night before's dinner)
Any meat - 200g Small prawns, cooked & peeled, I used frozen and defrosted by running water over them
Any type of cheese - Shredded mature cheddar, 125g
Seasoning to taste (I used herbs de provence, salt and pepper with a dash of caribean seasoning but it is really up to you what you like)

Beat eggs with the milk, add cottage cheese some seasoning and flour, combine until somewhat smooth. Then add in veg, prawns & 1/2 the cheddar. Pour into your cooking dish (I used 3 glass dishes but sometimes I make them in fairy cake pan to create quiche cups)

Top with remaining cheese and some seasoning.

Bake at 200/Gas mark 6 (180 for fan assisted) for 30-40 minutes until the quiche looks firm (no wobble in the surface when you shake it) and is golden.

Remove from oven and let cool for 5-10 minutes, the quiche will shrink as it cools so don't panic if it becomes flat, that is normal!

Remeber this can be customized, I use leftover bacon, swiss cheese & grilled peppers which is a lovely combo. Also, spicy things work well too, like leftover curry or spicy sausage. Have fun with it. I sometimes top it with fresh tomato slices or fresh mushrooms.

Hi Nic, Thanks for the fab recipes. I am a true novice in the kitchen but desparate to learn, so I was wondering would these quichies freeze or does it spoil them?

The quiche will freeze well, no worries, in fact I always freeze at least half what I make.

Thanks for that Nic. Might give them a go tonight as it will be real handy to take for lunch at work tomorrow.

Snacks and fluids Day 1:

1 clementine
4 milky coffees (400 mils each, I have shown a regular size mug next to my giant one to illustrate, I make my milky coffee with 2-3 teaspoons skim milk powder & sugar substitiute)
1.5 litres of water
1 Bananaberry Protein Bar (or flapjack)

Sorry to be a pain but the Bananaberry Protien bar, is this somehing you made or bought? I love this type of thing and it would also be great to take with me to work so if you have the recipe or one for something similar I would much appreciate it.

Goodness I can't belive all these cooking questions and recipes I am after, I think my bypass has changed something in my brain in regards to actually WANTING to cook...lol:p

I am planning on making a batch tomorrow of the Bananaberry bars, I will post the recipe & photos then.

Iv just made the onion soup but put it in the blender and put the chesse in the soup and it was so nice well what i got of it as my 3 year old had most of it and is now eating his 3rd cup so good food all round

ha ha i must admit I am waiting anxiously for the recepie for these I have my note book ready and I will be off into the kitchen to bake some. I have just made some oat protien bars they are cooling on the side in the kitchen and I can smell them in the living room I cant wait to taste them even my dog is sniffing the air and drooling ha ha ha xxx

How many quiche cups would the ingredients make please?

Would probably be about 18 cups from this recipe, I always do a glass dish (for hubby) and then a tray of 9 for myself. But I think it would be about 2 trays of 9.

Just wondering if I will have enough room in my freezer!!! Also once frozen would I have to defrost then warm through or can they go in the oven frozen???

They are just as good cold as they are hot, actually hubby likes them straight out of the fridge. As for freezing, I put them forzen in the microwave (I usually have 2) for like a minute and that works. It is slightly warm but not hot. If you want to pop them in the oven to warm up I would wrap them in foil and cook for 10-15 mins at 180. I would however recommend you try them cold or room temp as they are tasty that way and less fuss.

Day 2 Lunch:

Italian 3-Bean Salad
Cannelini Beans, 400g can, drained & rinsed
Kidney Beans, 400g can, drained & rinsed
Black Beans, 400g can, drained & rinsed
Sweet Corn, 200g can, drained
Red, Green & Yellow Peppers raw diced
Onion, 1 large or 2 medium, raw diced
Mozzarella Pearls, 125g, cut into quarters
Olive Oil, 3 tbsp
White Wine Vinegar, 3 tbsp
Seasoning to taste: I used ground hot pepper & garlic flakes (2-3 twists), Sea salt (lots as I <3 salt), Schwartz Fennel, Tomato & Basil 2-3 teaspoons.

Put everything together in a bowl, stir then chill for at least an hour but is better if it chills ovenight. Give it a good stir before serving and check seasonings, add if needed.
